Director of Dining Services and Food Stores
Ron is keenly interested in two goals: 1) reducing costs, and 2) increasing quality and variety in residence hall food service. Over the past five years, for example, $2.5 million in savings has been realized by contracting with a prime vendor. His reorganization of the food service staff resulted in another $420,000 savings over five years.
At the same time, Ron has introduced new menu items, new products and additional meal options. He has also created convenience stores for snacks, which bring in additional revenue.
In addition to his regular food-service duties, Ron assumes responsibility for about 250 additional special events each year, including meals for Learning Communities, summer conferences, and both on and off-campus events. During his off-duty hours, he serves on the Board of Directors of the Lincoln Food Bank and is an officer in regional and national college food service associations.
